FRIDAY FAVORITES #2 – FALL RECIPE ROUND-UP

happy friday

Friday’s are the best. 🙂

So, I finally had an MRI on my knee. 3 months after I went to the doctor. And did physical therapy. And was trying to get back into running.

Meniscal tear.

Great. :/

I see the orthopedist on Wednesday and I’ll find out how bad, where the tear is, and what my options are. Fingers crossed for a tear in the FRONT because those generally heal on their own. But, I hurt in the BACK of my knee so I’m not super positive. I just wonder how much additional damage has been done because it took so long to get an MRI? Don’t EVEN get me started on military healthcare. That’s for a whole different post.

Today’s post is HAPPY! And DELICIOUS!

Today, I bring to you, my five favorite Fall baking recipes!

What makes a great Fall recipe? Well, I think of meals that fill the house with warm and welcoming smells, are full of delicious fall flavors (think pumpkin, cinnamon, spices, etc), and make everyone feel good. They are recipes you look forward to making and your family looks forward to eating. They’re memories on a plate!

Greek Yogurt Pumpkin Banana Bread

You guys. This bread. Amanda over at Running With Spoons hit the nail on the head with this one. I just made and devoured a loaf last week before the heat wave hit. So easy, so yummy! It’s not quite banana bread and it’s not quite pumpkin bread – it’s a delicious marriage of the two! I slather mine with some form of nut butter. I may or may not have consumed an entire jar of almond butter while devouring this loaf. #noregrets

Homemade Monkey Bread (aka Cinnamon Roll Bites)

Breakfast anyone? Looking for a great way to enjoy a cool morning with your family? Or maybe you have guests and are looking to serve more than coffee and donuts? Um, monkey bread. THIS monkey bread. Make it. It’s worth it! Sally at Sally’s Baking Addiction knows what she’s doing.

Dutch Oven Bread

Okay, fine. So this one doesn’t have pumpkin or peanut butter or cinnamon BUT, it’s homemade bread. HOME.MADE.BREAD. And, it’s pretty darn easy to make. And then, you get to serve delicious homemade bread to your family! You can thank Lindsay at The Lean Green Bean for this one. 🙂

Pumpkin Bread

Now, you KNOW straight up pumpkin bread had to show up. I mean, c’mon – it’s FALL! Fall and pumpkin are like peas and carrots, peanut butter and chocolate, Joanie and Chachi  (showing my age on that one. #dontjudge)! If you love pumpkin, this bread is for you. Deb at Smitten Kitchen is the genius behind this delicious bread. 🙂

Skinny Apple Cinnamon Oatmeal Muffins

Um, Fall and apples. Yeah, BUDDY! And then apples plus cinnamon = love. It is true. Pack it into a muffin and you’ve got Fall lovin’ in a muffin! Ugh. Sorry. That’s way corny. Won’t happen again. Anyhoo, Liz at I Heart Vegetables is the brain behind this fabulousness!
