APPLE BANANA OATMEAL BREAD

One thing that you should definitely know about me is that I love to bake. It’s in my blood. And my blood gets thick with baking as soon as Fall and cooler weather hits! LOL

I love to bake so much that, when I worked in the corporate world, I used to bake and take.  Sharing was one of my favorite things! Now that I’m no longer work in an office, my sharing options are limited. lol Now I try to pawn off some of what I’ve baked onto my kids so I don’t have to eat all the muffins, breads, and cookies by myself. 😀

Lately, I’ve been baking with pumpkin because, hello, Fall! However, Thing 2 is not really that into pumpkin so my treats have remained in the same ziplock bag that they were sent to her in, often in the back seat of her car, until they made their way into the trash. How rude!

Well, I want her to love me so I decided to bake without pumpkin. Or blueberries, for that matter.

Seriously, she doesn’t like blueberries. How is she even my child?!  Anyway, she looks like me so …..

…and moving on….

Who doesn’t like banana bread? All things good in the world usually revolve around a delicious slice of banana bread, amiright? Thing 2 definitely likes banana bread. At least she’s not totally cray.

Well, guess what you guys? I upped the game. I added in some oats and chopped apple, and I took out the heavy oils and refined sugars. Boom.

What’s left is a delicious and flavorful loaf that you can feel good about sharing with your family and friends. Or just saving for yourself. Ain’t nothing wrong with that! #youdoyouboo #judgmentfreezone

Eat it warm straight from the oven, enjoy a slice at room temperature, or toast it up and slather it with butter or nut butter.

Or, top it with nut butter and greek yogurt and fruit for an amazing and healthy breakfast! Look at me, all fancy over here. 🙂

APPLE BANANA OATMEAL BREAD

Instructions
  1. Preheat oven to 350 degrees. Spray 9-inch loaf pan with nonstick cooking spray or line with parchment paper.
  2. In a large bowl, whisk flour, oats, baking soda, cinnamon, allspice, and salt until combined. Set aside.
  3. In a medium bowl, mash the bananas. Add eggs, yogurt, honey, and vanilla and whisk until combined.
  4. Pour wet ingredients into dry ingredients and stir until combined. Fold in chopped apple.
  5. Bake at 350 degrees for 55 - 60 minutes, or until a toothpick inserted comes out clean. Allow bread to cool in the pan for 10 minutes before transferring the loaf to a cooling rack to cool completely.
Recipe Notes

*All-purpose flour can be used instead of the white whole wheat. For GF, you could probably use a 1-to-1 flour but I haven't tried it.

*You could use vanilla greek yogurt if you wish, just decrease the amount of vanilla extract, unless you really are all about that vanilla!

*Use whatever apple floats your boat.  A Granny Smith would be excellent here.

      It’s so good! I usually shred the apple when I bake – adds moistness and sweetness – but I decided that I wanted little apple chunks in this one. I think you could go either way and it would be delicious.
