APPLE BANANA OATMEAL BREAD

  1. Preheat oven to 350 degrees. Spray 9-inch loaf pan with nonstick cooking spray or line with parchment paper.
  2. In a large bowl, whisk flour, oats, baking soda, cinnamon, allspice, and salt until combined. Set aside.
  3. In a medium bowl, mash the bananas. Add eggs, yogurt, honey, and vanilla and whisk until combined.
  4. Pour wet ingredients into dry ingredients and stir until combined. Fold in chopped apple.
  5. Bake at 350 degrees for 55 – 60 minutes, or until a toothpick inserted comes out clean. Allow bread to cool in the pan for 10 minutes before transferring the loaf to a cooling rack to cool completely.
Recipe Notes

*All-purpose flour can be used instead of the white whole wheat. For GF, you could probably use a 1-to-1 flour but I haven’t tried it.

*You could use vanilla greek yogurt if you wish, just decrease the amount of vanilla extract, unless you really are all about that vanilla!

*Use whatever apple floats your boat.  A Granny Smith would be excellent here.
