AVOCADO S’MORES BROWNIES! (yes, avocado. trust me.)

Today is one of the best. days. ever. It’s National S’Mores Day!! Did you even know that S’Mores had their own day? Well, duh, of COURSE they do – they’re S’Mores! And we all want s’more!! #lamejokeattemptnumber1 #sorrynotsorry

Now, I happen to love s’mores. LOVE them. And I love going all out with them. I mean, I’m a fan of the traditional graham cracker, hershey bar, toasted marshmallow s’more but, sometimes, I like them a little fancier. You know, with homemade chocolate chip cookies instead of the graham crackers.

I’ve even been known to throw a peanut butter cup in there or use some really fancy dark chocolate. *swoon*

Of course, I can only eat just one but man, oh, man was that one worth it!

So, a little history of the s’mores. Apparently, they’ve been around since 1927 per the Girl Scouts handbook but some people think they’ve been around longer. (source) #theend

I say they’re probably right because we’ve been cooking out over an open fire for centuries and, (I’m sure it wasn’t on purpose) some kid probably put an early marshmallow on a stick and busied himself making it brown and toasty and delicious. Of course, after that, a super smart person figured out that most everything goes well with chocolate and decided to combine the 2. The next super smart person figured out how to make it all a sandwich and voila, the s’mores was (or is it were?) born!

(okay, seriously, if it’s just one, is it a s’more or is it still s’mores? the grammar nerd in me wants so badly to make it singular!!!)

Anyhoo, there are countless ways that you can create your own individual s’mores. I decided to make s’mores brownies! (and although the Girl Scouts take credit for the s’mores, these brownies were not made with actual Brownie Girl Scouts. ba-dum-bump-ching! #lamejokeattemptnumber2 #okayfineimsorryaboutthatone)

But, back to the brownies!

How about oooey, gooey melty marshmallow on top of a decadent fudgy brownie on top of a cinnamon-y graham cracker crust?

Now, I know what you’re thinking. You’re thinking – “Jennifer, you’re supposed to be a fit and healthy person and s’mores are so NOT healthy. I mean, hello, FIT Nana and all that jazz.”

Well, you are correct. I am a fit and healthy person. That is my preferred lifestyle. Most of the time. Hey, I AM human, you know! And, it can get a little boring being fit and healthy ALL the time and hello, s’mores. There’s nothing wrong with indulging every now and then. NOTHING. #treatyoself And, besides, it’s my party and I’ll make s’mores brownies if I want to.

With avocado instead of butter. As my nod to “healthy.” *wink wink*

Did you know that you can, especially in baked goods – especially in CHOCOLATE baked goods, sub avocado for the butter? Avocado is a fat, just like butter, but it is a healthier fat (minus the trans-fats!). One avocado provides extra fiber, potassium, B vitamins, and Folic Acid, to name just a few of the nutrients found in that beautiful green fruit. Yes, it’s a fruit. For reals!!

For more info on this “super food”, check out this from the California Avocado Board.  You’ll never taste the difference! (although, you might see some speckles of green if you don’t get it mixed/mashed well enough and, if you’re not using chocolate as a recipe base, you might notice a slight green tint. Whatever. Tastes amaze-balls.)

Oooey, gooey, melty marshmallows atop a rich, fudgy brownie atop a cinnamon-y graham cracker crust - these s'mores brownies are sure to delight kids of ALL ages!

s'mores brownies
  1. Preheat oven to 350 degrees. Spray 9x9 inch baking pan with non-stick cooking spray.
  2. In a small food processor, mix graham crackers (about 3 packages if you use graham stacks) with melted butter and cinnamon. Press into prepared pan and refrigerate until needed.
  3. In a medium bowl, whisk eggs. Whisk in sugars and vanilla until sugar is well dissolved. Whisk in cocoa powder.
  4. In a separate bowl, mash avocado. Add into egg & sugar mixture and stir until well blended. Add flour and salt and stir to combine. Fold in chocolate chips and spread over graham crust.
  5. Bake for 30-35 minutes (depending on your oven). Remove and turn oven heat up to 400 degrees.
  6. Top warm brownies with marshmallows (large cut into halves or quarters or use mini-marshmallows. Return to oven for 3-4 minutes until marshmallows start to soften.
  7. For additional browning, turn broiler on and broil for approximately 30 seconds to 1 minute (DO NOT LEAVE YOUR OVEN DURING THIS TIME! THE MARSHMALLOWS WILL BROWN VERY QUICKLY AND POTENTIALLY CATCH FIRE.) If you have a kitchen torch, you can torch the marshmallows to brown.
  8. For ease of slicing, allow to cool completely.
  9. NOM!
Recipe Notes

Store, covered, in refrigerator. You don't even need to heat the brownie up after it's chilled. It's pretty flippin' awesome cold!
