FUDGY TRIPLE CHOCOLATE BROWNIES

I cannot tell a lie.  I have totally been craving brownies.  And not just any brownies – although, it was getting to that point where I mighta grabbed a sub-par brownie and been disappointed but I controlled myself. it was hard. – but these super fudgy triple chocolate brownies.

Again, I cannot tell a lie.  I did not skip out on or substitute something else for the sugar in this recipe. These are brownies, people. Generally, you’re going to find sugar in a brownie. It happens. They’re supposed to be a treat! A special moment at the end of a long stressful day. Or just a fun moment with your kids.  Or for sharing at a family gathering.  Consume sparingly but make sure you savor every bite!  Okay, now that we’ve got that little bit of business out of the way……

The fun thing about these brownies is there’s no flour!  Nope!  I just used some oats that I turned into oat flour.  Benefits?  You don’t need to spend extra money and, as long as you buy gluten free oats, these brownies will also be gluten free which is very very important for some people.  Don’t worry peeps – I got you covered. 🙂

It’s so simple to do, too!  Just throw your oats in a food processor and pulse until you have a fine flour-like powder!

Okay, I gotta do it again.  I cannot tell a lie.  I snuck in some protein.  Did you know that you can sub greek yogurt for butter in quite a few baked goods?  Did you also know that Siggi’s (not exactly greek yogurt as it’s Icelandic Skyr but you can use plain greek if you don’t have Siggi’s on hand. *side note* you should always have Siggi’s on hand. 😀 ) is jam-PACKED with protein?  I used 3/4 cup in this recipe and that amount has nearly a whopping 19 grams of protein!! Not saying that this makes these brownies “healthy” but …. protein is an added bonus that you can feel good about! 🙂

FUDGY TRIPLE CHOCOLATE BROWNIES

Fudgy triple chocolate brownies
Instructions
  1. Preheat oven to 350 degrees and lightly spray 9x9" baking pan with non-stick cooking spray. Or prep it with parchment paper, if that's your thing.
  2. Place 1 1/2 cups oats into food processor and process until a fine powder. Pour into small bowl and add baking soda and salt; whisk to combine.
  3. In a large bowl, add yogurt, cocoa powder, and sugar. Using a hand mixer, mix until just combined. Add eggs, one at a time, mixing well after each addition. Mix in vanilla.
  4. Add chocolate chips and fold to combine.
  5. Spread batter into prepared pan (it will be thick!) and bake for 25-30 minutes or until edges just start to pull away from sides of pan.
  6. Remove from oven and cool, in pan, on wire rack for at least 15 minutes before cutting. PLEASE ALLOW THIS AMOUNT OF TIME! It helps the brownies set up a little better. And besides, you don't want to burn your mouth. 🙂
  7. Cut into squares and serve. Or cut into squares and hide them from your family so you don't have to share. 😉 You do you, boo. <3

    Well, right now I’m doing a little reset. Which I’m actually enjoying. Cravings almost immediately disappeared. And yeah, it goes to the end of the month. So no brownies for me at the moment. They sure look good, though.

    They do have flour, though. 😉 Oat flour!
