Preheat oven to 350 degrees and lightly spray 9×9″ baking pan with non-stick cooking spray. Or prep it with parchment paper, if that’s your thing.
Place 1 1/2 cups oats into food processor and process until a fine powder. Pour into small bowl and add baking soda and salt; whisk to combine.
In a large bowl, add yogurt, cocoa powder, and sugar. Using a hand mixer, mix until just combined. Add eggs, one at a time, mixing well after each addition. Mix in vanilla.
Add chocolate chips and fold to combine.
Spread batter into prepared pan (it will be thick!) and bake for 25-30 minutes or until edges just start to pull away from sides of pan.
Remove from oven and cool, in pan, on wire rack for at least 15 minutes before cutting. PLEASE ALLOW THIS AMOUNT OF TIME! It helps the brownies set up a little better. And besides, you don’t want to burn your mouth. 🙂
