PEPPERMINT KISS BROWNIES

Hey friends! Guess what today is?!

Well, yes, you’re right. It’s definitely Thursday, December 8.  (17 days until Christmas, in case you weren’t keeping track.) But, it’s also something else. It’s one of the greatest days in the history of days!!

It’s National Brownie Day!!

I love brownies. Sometimes I love them so much, I bake a pan and eat all of them. ALL. By myself. Prolly shouldn’t do that too often, should I? #yolo

And, in the spirit of the holiday season, all things seem to be either pumpkin or peppermint. Now, don’t get me wrong, I’m all about the pumpkin but sometimes, the peppermint needs to be in more than a piece of candy shaped like a cane or a frosty coffee drink from that place we ALL love to go to…..

And why should brownies lose out on that peppermint fun? Why not chop up some fun candy cane kisses and toss them into a fudgy brownie batter?

Instructions
  1. Preheat the oven to 375 degrees. Butter an 8- or 9-inch square baking pan.
  2. In a saucepan, melt the chocolate with the butter over low heat. Let cool slightly.
  3. In a bowl, beat the sugar with the eggs and peppermint extract. Add the melted chocolate and beat until smooth. Stir in the flour and the salt, and then fold in the chopped kisses and chocolate chips.
  4. Scrape the batter into the prepared pan and bake for 20-25 minutes (less for the larger pan since the brownie is thinner), or just until firm. The edges will begin to pull away from the sides of the pan, too.
  5. Let cool completely in the pan. (trust me on this. it's hard but you need to wait!) Cut into squares and serve!
Recipe Notes

If you are a total peppermint nut, feel free to up the extract to 1 full teaspoon. Also, feel free to top with additional chopped candy kisses after baking!

For a festive look, you can press candy kisses into the brownies immediately after they come out of the oven (think hershey's kiss cookies). For an even MORE festive look, frost with brownies and top with crushed up candy canes!
