You guys. Fall is coming!! And you know what that means…..

It’s time for all things..

PUMPKIN!!!

Did you know that pumpkin is a nutrient-dense food? It’s chock full of vitamins and minerals like Vitamin E, Vitamin A, Iron, Niacin, and Potassium which your body needs.  Plus, it’s super versatile and can be added or incorporated into so many different recipes.

Like a yummy loaf of bread. 😀

Pumpkin bread is usually made with loads of sugar and butter and that’s what makes it dense and delicious.  AND maybe not always the best choice…..

But seriously, if you love pumpkin bread like I love pumpkin bread (I mean, it’s pretty serious. we’re way past dating stage…), you might appreciate feeling weighed down after you enjoy a nice thick slice …or three… slathered with nut butter or apple butter. #YOLO

And that’s what’s awesome about this recipe.  There’s no oil, no butter (leaves you wiggle room for a nice schmear of buttah, if that’s your thang….), and no refined sugar.

BOOM.

Plus, it’s packed with protein-rich ingredients like Siggi’s yogurt and eggs. And, the addition of the oats and the apple adds fiber (and moistness!) to help keep you full and satisfied. 🙂

It’s basically perfection in a loaf of bread.

PUMPKIN APPLE BREAD
Packed with all the flavors of Fall, this pumpkin apple bread is made without oils or butter or refined sugar and has an added boost of protein thanks to the Greek yogurt. It's a snack/treat you can feel good about enjoying!

Instructions
  1. Preheat oven to 350 degrees and prepare 9 inch loaf pan by either spraying with non-stick spray or lining with parchment paper.
  2. In a small bowl, combine pumpkin, eggs, shredded apple, yogurt, and honey. Whisk to blend.
  3. In a large bowl, whisk together flour, oats, cinnamon, baking powder, baking soda, salt, ginger, and nutmeg.
  4. Add wet ingredients into dry and stir until just combined. Spread into prepared loaf pan.
  5. Bake for 50 minutes to an hour (depends on your oven and what type of pan you are using) or until a toothpick inserted in the center comes out clean.
  6. Cool in pan on rack for 10 minutes and then remove loaf from pan to cool completely.
  7. Slice and serve. NOM!
Recipe Notes

*There are a variety of ways to shred an apple. No, you don't need to peel it first but if you would prefer that, then do it.  I cut the apple into chunks and shredded it with a box grater. Just be careful you don't shred your fingertips! That would not be tasty.

*You don't have to use Siggi's but I think it's the best choice. 😀  Seriously though, use what you have just make sure it's plain. Vanilla yogurt will probably be tasty too but it will change the flavor profile of the loaf a little bit.

*Start checking the loaf at about 50-55 minutes. You don't want to overcook the bread!

*To make this gluten free, you can use your favorite 1-to-1 gluten free flour blend in place of the all-purpose. Also, make sure you use gluten free oats.

    Pumpkins remind me of Fall and I REALLY cannot wait for Fall to arrive! Loving the addition of apple to this bread and it looks super yummy!
