PUMPKIN OATMEAL PROTEIN BARS

So, what’s your normal morning routine? Smack the snooze button 1253 times, run around like a crazy person getting ready for work with barely enough time to grab coffee and a donut/muffin at the convenience store/specialty coffee store on your way in to work? Do you even eat breakfast?

Well, with a small amount of prep work on the weekend, now you can grab a healthy and delicious, protein-packed breakfast on your way out of the door. These Pumpkin Oatmeal Protein Bars are super easy to make and definitely yummy to eat! Make a batch over the weekend, cut into bars, and store in individual baggies in the fridge perfect for grabbing on your mad dash out of the house.

If you have a little bit of extra time (i.e. you only hit the snooze 1187 times), you could even top these bars with a dollop of greek yogurt and a sprinkle of cinnamon and serve with your favorite fruit on the side. 🙂

Don’t skip breakfast and be dragging by the time 10am rolls around. Stop falling asleep in those morning meetings (unless the content is really boring. then, I can’t help you. sorry.) Have enough energy to do the work of 2 people and finally get that promotion you’ve been hoping for!

Okay, seriously, I don’t know that these bars will help you get promoted but I do know that protein helps fill you up and gives you energy and the oats are slow-burning carbohydrates, meaning they stick around longer rather than being burned off as quickly as a glazed donut. The pumpkin adds terrific flavor that isn’t just reserved for Fall and is packed with fiber which will help you feel fuller for longer. So, basically, these bars are packed with such awesomeness that they should power you straight through to lunch!

So, what are you waiting for? Go buy a can of pumpkin and make some. Your stomach will thank you in the morning. 🙂

Instructions
  1. Preheat oven to 375 degrees. Spray 9-inch square baking pan with non-stick spray or brush with coconut oil.
  2. In a large bowl, mix all the dry ingredients using a whisk.
  3. In a small bowl, lightly beat egg. Add mashed banana and pumpkin. Stir to combine. Add vanilla and milk and mix well.
  4. Add wet ingredients to dry and mix with a wooden spoon until just combined. Spread into prepared baking pan.
  5. Bake at 375 degrees for 30-35 minutes or until bars start to pull slightly away from edges or toothpick inserted in center comes out clean. Remove from oven to cooling rack and allow to cool completely.
  6. Cut into bars and enjoy!
Recipe Notes

Wheat germ and ground flax meal are optional. Don't sweat it if you don't have them. If you have powdered peanut butter, you can certainly use that instead for a great peanut butter flavor!
