Toasted walnut cashew butter

I gave some to my son-in-law and he said it tasted like “Gawd!!” (as in an exclamation, not as in our Heavenly Father.)

It IS pretty divine, though.

I cannot stop eating it. Seriously. It’s practically taken over my life. That doesn’t sound weird, right? Nahhh…  If you follow me on Instagram, it is the mystery “homemade nut butter” that’s been popping up in my photos over the past couple of weeks. And that’s just what I’m showing off over there! You have no idea what’s been happening behind the scenes.

Y’all just don’t even REALIZE!! I’ve literally been eating it by the spoonful. #noshame

I don’t know what makes it so amazing. Is it the combination of the walnuts and the cashews? Is it the toasting of the nuts first? Is it the addition of a small amount of vanilla and cinnamon that just brings out the flavors? I don’t even know and I don’t even care! All that matters is this stuff is quite possibly the MOST AMAZING NUT BUTTER I have ever had.

TOASTED WALNUT CASHEW BUTTER

Instructions
  1. Preheat oven to 350 degrees.
  2. Place walnuts on one baking sheet and cashews on another. Toast in oven 5 minutes, then toss or stir, and toast 3-5 minutes longer. Remove from oven and let cool slightly
  3. Place toasted walnuts and cashews into food processor. Blend until smooth, approximately 5-10 minutes depending on strength of food processor. Add vanilla and cinnamon and mix just until blended.
  4. Store in airtight container (mason jars work great!!) in the refrigerator.
Recipe Notes

*This nut butter will be very smooth and perfect for drizzling! Storing in refrigerator helps to firm it up a little but it will still be very smooth and easy to spread.

    I loooove nut butters but I’ve never tried one with walnuts! I definitely need to give this a shot because I know I’d love it!
